De Barbera Pairolero 2023 toont aroma’s van rijpe kers, zwarte bes, kruiden en lichte balsamico-tonen. De wijn is vol, krachtig en intens, met levendige zuren en een sappige, lange afdronk.

Vinificatie.
Handmatige oogst gevolgd door natuurlijke gisting. De wijn ondergaat malolactische gisting en rijpt ongeveer 15 maanden in tonneaux en barriques, voornamelijk gebruikt hout. Na botteling rust de wijn korte tijd op fles voor release.

Het domein.
Sottimano’s benadering van Barbera is gericht op concentratie en natuurlijke elegantie. De wijn komt uit kalkrijke en zandrijke bodems en wordt gevinifieerd met minimale interventie en veel respect voor terroir, wat resulteert in een krachtige, maar elegante Barbera.
