Vinificatie: pletten, ontstelen en een zeer kort verblijf in stalen tanks in contact met de schil. Na het rekken en decanteren begint de eerste fase van de gisting, streng gecontroleerd. De wijn wordt vervolgens gedecanteerd om de gist ervan te scheiden en blijft daar in afwachting van de tweede gisting. Hergisting van de wijnbasis gebeurt in roestvrijstalen tanks, waar het ongeveer 20 dagen gist, met behulp van geselecteerde gist, bij een constante temperatuur tussen 14°- 16°C. Na het bereiken van de gewenste overdruk wordt de massa gekoeld (-4°C) om de gisting te stoppen en te stabiliseren. Vervolgens wordt de wijn ten minste 2 maanden bij een gecontroleerde temperatuur van 8-10°C bewaard, om de natuurlijke rijping in contact met de gist te bevorderen. Het einde van deze fase wordt gevolgd door filtratie en isobarische afvulling van de flessen.

Geur: fris en fruitig, met hints van klein rood fruit, vooral framboos, en florale tonen van wilde roos

Smaak: fris, droog en sappig met goede zuren, uitstekende drinkbaarheid

Foodpairing: ideaal als aperitief, uitstekend bij vis en wit vlees, gebakken zeevruchten en groenten, sushi

Alcoholpercentage: 11,5% vol.
