Sugarille 2011 is een indrukwekkende, donker getoonde Brunello met veel diepte en karakter. In de neus komen zwarte kers, braam en pruim naar voren, verweven met zoethout, tabak, gedroogde kruiden, menthol en een aardse, stenige ondertoon. In de mond is de wijn compact en gespierd, met rijpe maar duidelijke tannines, een geconcentreerde kern van donker fruit en een lange, kruidige afdronk waarin spanning en structuur mooi blijven doorlopen.

Vinificatie.
De druiven worden met de hand geoogst en streng geselecteerd. Na fermentatie volgt een lange opvoeding die gericht is op structuur en integratie: de wijn rijpt ongeveer 24 maanden in grote houten vaten (botti), gevolgd door circa 6 maanden verdere rust in cuve/beton om de wijn te verfijnen en te stabiliseren. Daarna wordt gebotteld en volgt extra flesrijping op het domein vóór vrijgave.

Het domein.
Sugarille is een historisch perceel met een uitzonderlijk kalkrijke ondergrond, wat zorgt voor wijnen met kracht, diepgang en intensiteit.

Het domein werkt volledig duurzaam: natuurlijke bodembedekking, biodiversiteitsbeheer, handmatige bewerking, geen herbiciden en een energie-efficiënte, gravitatiegestuurde kelder. Sugarille is de meest majestueuze en krachtige expressie van Pieve Santa Restituta.
