In eerste instantie maar met een klein deel van de wijngaarden, maar in 2009 nemen Eloisa en Stefano het hele bedrijf over en starten ze ook direct met de conversie naar biodynamie. Nu zijn de wijngaarden biologisch en biodynamisch gecertificeerd.

Beschrijving: Fris, zacht, vol, zilt, smokey, kruiden, groene appel, rijpe peer, spanning, mooie zuren.

Lekker bij: Gerookte zalm, Roulade van kip met knoflook en rozemarijn, geroosterde bloemkool met geroosterde noten en paprikasaus, manchego kaas.

Leuk weetje: Qua stijl brengen de wijnen van De Fermo karakter en terroir: de Montepulciano’s zijn serieus, met diepte, structuur, soms kracht maar met frisheid; de Pecorino-wijnen zijn helder, mineraal, genuanceerd; de Chardonnay (Launegild) geeft iets meer parfum, houtinvloeden, rijp wit fruit, maar altijd in balans. Hun rosato‑wijnen (bijv. Le Cince) tonen ook hun vaardigheid om Montepulciano met finesse te behandelen.
