We’ve long held Create’s work in high regard and are excited we can finally visit Greece to collaborate with them. Their Chiroso, a rare varietal, is a real stunner too. A natural Colombian coffee that offers a bold, expressive aroma that opens into a balanced cup—sweet, bright, and clean, with subtle funky notes. It begins intensely and complex, finishing delicate and refined.

ABOUT THE COFFEE

This lot comes from Finca Las Flores run by a renowned producer, Johan Vergara. Since being featured in the 2006 Cup Of Excellence, Johan has transformed the quality of coffee by planting exotic varietals including Pink Bourbon, Tabi, Sidra and Wush Wush. Chiroso is a relatively new variety, which originated in the Urrao region of Antioquia in Colombia, and very rare being a mutation of an Ethiopian Landrace. It is a nutritionally demanding coffee. It needs to be harvested at least four times a year, but it more than makes up for this with its high productivity.
