The vines grow in volcanic soils rich in rocks and ash, and the site includes two small, phylloxera-surviving parcels totaling just 0.8 hectares, producing extremely low yields that concentrate flavor and intensity.
In the cellar, fermentation takes place at controlled temperatures to preserve purity and freshness, followed by spontaneous malolactic fermentation. The wine is then aged for 16–18 months in French oak barriques and tonneaux, with a final month in steel before bottling. The result is a limited-production Etna red that reflects its volcanic origin with precision, depth, and structure.
