Heavy-Duty Construction
Cooking vessel made from AISI 316 stainless steel (2.5-4.0 mm thickness) for durability and resistance to acidic products. Jacket, self-supporting frame, and outer cover are constructed from AISI 304 stainless steel with a fine satin finish.
Insulated Tilting Lid
Features an insulated lid with a double cover in AISI 304 stainless steel, an ergonomic handle, and gas spring balancing for safe and easy operation. The vessel tilts electrically from the front.
High-Efficiency Gas Heating
Utilizes high-efficiency stainless steel tube burners with automatic ignition and flame control, eliminating the need for a pilot burner. Heating is controlled electronically with automatic activation.
Precise Temperature and Pressure Control
Temperature is precisely controlled by two probes (one for the product and one for the jacket). Pressure is managed by an 8.7 PSI pressure switch, a 12.3 PSI safety valve, a vacuum valve, and an analogic pressure gauge. A breather valve eliminates air for faster heating.
Advanced Electronic Control
Equipped with a multifunctional keyboard and a 7" resistive Touch Screen display with clear messages. Features ON/OFF switch, basin movement keys, and settings for various cooking modes.
Programmable Cooking Modes
Offers 5 different cooking modes (6 with optional cooling), with settings for working temperature, cooking type, and time. Users can create and edit multiphase programs, including text messages for each phase.
HACCP Data & Software Management
Includes a USB connection for downloading HACCP data, updating software, and loading cooking programs. Supports MODBUS over RS485 serial interface for machine interrogation.
Automatic Double-Jacket Filling
The double-jacket automatically fills, and the system manages water level with a sound-visual alarm for minimum water in the jacket.
Adjustable Stainless Steel Feet
Four adjustable AISI 304 stainless steel feet ensure proper leveling and stability, with removable covers for easy cleaning.
Enhanced Safety Systems
Features an emergency button, heating block for excess temperature with a manual resettable safety thermostat, heating block at minimum water level, double-jacket safety valve, and heating interruption during vat tilting.
IPX4 Protection Level
Offers IPX4 protection level, indicating resistance to water splashes from any direction.
