創業から220年を越える醤油蔵
創業から100年を越えている醤油蔵は決して珍しくはありませんが、200年を越えている蔵はかなり少なくなります。 2017年に大規模な工場のリニューアルを行いました。現代の衛生基準に合わせて原料処理や圧搾の工程は、管理と清潔が保たれるようになりましたが柱や梁は昔のまま。
もちろん木桶も明治～昭和初期に造られた昔のままで、発酵管理も変わらず天然醸造。自然の気候と四季の気温の変化に委ねて行い、伝統と最新が敷地の中で共存しています。
「日本一」の名にふさわしい醤油
日本農林規格登録認定機関OCIAジャパンの認証を受けた有機醤油で、原材料は国内の生産量が極めて少なくダイヤモンド並みに貴重と言われている北海道産有機大豆と有機小麦にこだわり、100％原料としています。どっしりとした風味があり、第一印象は「濃くてしっかりした味」ですが、味わうと塩角のとれたまろやかさを感じます。
煮物や炒め物に
少し濃厚なにほんいちしょうゆ一番しぼりは、煮物や炒め物にさっと加えて使っていただくのがおすすめです。炒め物の仕上げに醤油をひとまわし。熱が加わった醤油の香りと、油と結びついたうま味が素材に染み込んでいきます。
プリンに醤油でウニ風味？！
