Petite Marmite was a landmark of Palm Beach from the late 50's till it closed about 20 years ago. They had many great recipes. This book includes them all including the mustard vinaigrette. Some of the recipes are specified in quantity so you might have to divide by two to four for your family to get the right amount. When Petite Marmite was at its peak there were not as many good restaurants as there are now. However very few if any restaurants now have as many great chefs and cooks as that restaurant did then. There was a tremendous amount of talent and work in that restaurant reflected in every dish that they served. For this the book is part of Palm Beach history.
