Besonderheiten: Der Copeland Irish Gin wird in der 2016 gegründeten Copeland Distillery in Donaghadee, Nordirland, hergestellt. Die Produktion begann 2019 mit einem Fokus auf handwerkliche Destillation in kleinen Chargen. Die Brennerei nutzt drei Kupferbrennblasen, von denen eine speziell für die Gin-Herstellung vorgesehen ist. Die Botanicals, darunter Kiefernnadeln und Orangenschalen, werden 16-24 Stunden in Alkohol eingeweicht, bevor sie destilliert werden. Nach der Destillation reift der Gin zwei Wochen, bevor er abgefüllt wird.

Die Herstellung erfolgt unter zeitintensiven Prozessschritten, wie dem Einweichen der Botanicals in Alkohol sowie der Verwendung eines 300-Liter-Kupferkolonnenbrennkessels. Der Gin wird nach der Destillation auf 45% ABV verdünnt und reift für zwei Wochen, bevor er abgefüllt wird. Dies gewährleistet eine präzise Herstellung eines hochwertigen Gins.

For example, any discussion of Jackie Fisher I have read previously seemed to border on the hagiographic, whereas here he seems to get a very evenhanded appraisal. A great book, highly recommended.
